  • 3 pieces ripe bananas, mashed Look for bananas with brown spots for maximum sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth, then mix in the melted butter.
  • Stir in the baking soda and salt. Add the sugar, beaten egg, and vanilla extract, mixing well. Finally, mix in the flour until just combined – be careful not to over-mix!
  • In a small bowl, combine the cinnamon and brown sugar. Set aside.
  • Pour half of the banana batter into the prepared loaf pan. Sprinkle half of the cinnamon mixture over the batter. Add the remaining banana batter on top, then sprinkle with the rest of the cinnamon mixture.
  • Using a knife, gently swirl the batter to create a marbled effect.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm with butter, cream cheese, honey or maple syrup. Pairs well with fresh fruit and a steaming cup of coffee or tea.
