Ingredients
  

Main Ingredients

  • 1 lb ground beef (or turkey for a lighter option)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped any color
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed

Spices

  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper

  • fresh cilantro
  • chopped green onions

Instructions
 

Preparation

  • In a large pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.
  • Add the chopped onion, minced garlic, and bell pepper to the pot. Sauté for about 5 minutes until the veggies are softened.
  • Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute to let the spices release their flavors.
  • Pour in the diced tomatoes (with juice), kidney beans, and black beans. Stir well to combine everything thoroughly.

Cooking

  • Reduce heat to low, cover the pot, and let it simmer for 20-30 minutes. This allows the flavors to meld together beautifully.
  • Remove from heat and serve hot with your favorite toppings!

Notes

Customize the spice level by adjusting the chili powder or adding sugar to balance the heat. Chili tastes even better the next day, allowing flavors to develop! For a vegetarian version, substitute ground meat with lentils or beans.
