  • 1 pound ground beef or turkey (or a meat substitute)
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14 oz) diced tomatoes (with juices)
  • 1 can (8 oz) tomato sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Preparation

  • Start by chopping the onions and mincing the garlic. Rinse the beans and set them aside.

Cooking

  • In a large pot over medium heat, add the ground beef or turkey, cooking until browned and no longer pink. Drain excess fat if needed.
  • Stir in the chopped onion and minced garlic. Sauté until the onions become translucent and fragrant, about 4-5 minutes.
  • Sprinkle in the chili powder, cumin, and paprika. Mix well, allowing the spices to toast slightly for about a minute.
  • Pour in the diced tomatoes, tomato sauce, and both types of beans. Stir everything together and season with salt and pepper.
  • Reduce heat to low, cover, and allow to simmer for 20-25 minutes, stirring occasionally.
  • Once thickened to your liking, ladle the chili into bowls and top with your favorite toppings.

Notes

Tip: Don’t rush the cook time; allowing the chili to simmer will enhance the flavors. Customize it by adding veggies like bell peppers or corn for a different twist.
