Ingredients

  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup unsalted butter, at room temperature
  • 1/4 teaspoon salt
  • 1/2 teaspoon paprika (optional for flavor) Add for extra flavor

  • 1 cup all-purpose flour
  • 2 tablespoons cold water

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  • In a medium bowl, combine the shredded cheddar cheese, butter, salt, and optional paprika. Use a fork or a mixer to blend until well combined and creamy.
  • Gradually add the flour to the cheese mixture, creating a crumbly texture that resembles wet sand.
  • Add the cold water, one tablespoon at a time, mixing until a cohesive dough forms.
  • Place the dough between two sheets of parchment paper and roll it out to about 1/8 inch thick.
  • Use a knife or pizza cutter to cut the dough into small squares (about 1 inch). Place them on the prepared baking sheet, leaving some space between each cracker.
  • Bake in the preheated oven for about 15-20 minutes, or until the edges are lightly golden and the crackers are crispy.
  • Let the crackers cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For best results, store Homemade Cheez Its in an airtight container at room temperature for about 1 week. You can freeze uncooked dough for up to 3 months, baking directly from the freezer with slight adjustments to the baking time.
