Ingredients
  

For the Chicken

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 3 tablespoons unsalted butter Divided for sautéing
  • Salt to taste Salt

For the Sauce

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 can (15 oz) crushed tomatoes
  • 1 cup heavy cream Can substitute with coconut milk
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder Adjust to taste

For Serving

  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions
 

Preparation

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt. Cook until browned (about 5-7 minutes). Remove from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of butter. Sauté the chopped onion until translucent, around 3-4 minutes. Stir in the garlic and ginger, and cook for another minute.
  • Pour in the crushed tomatoes along with garam masala, turmeric powder, chili powder, and a pinch of salt. Simmer for 5 minutes until the mixture thickens slightly.
  • Return the chicken to the skillet, stirring to coat it in the sauce. Lower the heat and pour in the heavy cream. Allow to simmer for another 10 minutes, letting those flavors meld beautifully.
  • Remove from heat, garnish with fresh cilantro, and serve it over rice or with naan for dipping!

Notes

For additional flavors, consider adding lemon juice or nuts as toppings. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
