  • 1 cup egg whites Around 8-10 egg whites
  • 1/2 cup spinach, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red bell pepper, diced
  • Salt and pepper, to taste
  • Garlic powder or herbs, optional For added flavor

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the egg whites, chopped spinach, feta cheese, and diced bell pepper. Season with salt, pepper, and any additional spices you would like to include.
  • Whisk the ingredients together until well combined.
  • Lightly grease a muffin tin with cooking spray or a little olive oil.
  • Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.

Baking

  • Place the muffin tin in the preheated oven and bake for about 15-20 minutes or until the egg whites are set and lightly golden.

Serving

  • Remove the muffin tin from the oven and let the bites cool for a few minutes before carefully removing them. Serve warm or at room temperature.

Notes

For best results, use fresh egg whites and feel free to experiment with various vegetables and cheese. Leftovers can be stored in the refrigerator for up to four days.
