Preparation

  • Heat sesame oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Add the mixed vegetables and cook for 3-4 minutes.
  • Push the vegetables to one side and pour in the beaten eggs, scrambling until fully cooked.
  • Add the cooked chicken and rice to the skillet, mixing everything well.
  • Pour in the soy sauce and stir until well combined.
  • Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

Serve in a bowl topped with extra green onions; pairs well with sweet chili or soy sauce. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
