Preparation

  • Preheat your oven to 350°F (180°C).
  • Lightly grease a 9×13-inch baking dish with non-stick spray.
  • In a large mixing bowl, combine the cottage cheese, pumpkin purée, and eggs. Stir until well blended.
  • Mix in the maple syrup (or honey), vanilla extract, baking powder, cinnamon, nutmeg, and a pinch of salt. Ensure everything is well incorporated.
  • Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
  • Place the dish in the oven and bake for about 30-35 minutes or until the center is set and a toothpick inserted comes out clean.
  • Once baked, let it cool for a few minutes before slicing and serving.

Notes

If you want to reduce sweetness, cut back on the maple syrup or honey. You can also use Greek yogurt as a substitute for cottage cheese for an extra creamy texture! The spices truly elevate the flavor, so make sure to include cinnamon and nutmeg. Mix thoroughly to avoid clumps for a smooth and creamy bake.
