  • 1 large egg
  • 1 tsp baking powder
  • 0.5 tsp salt
  • Olive oil (for cooking)

Preparation

  • In a mixing bowl, combine the cottage cheese, flour, egg, baking powder, and salt. Mix until a dough forms.
  • Transfer the dough onto a floured surface and knead gently for about a minute until it becomes smooth.
  • Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a disc using your hands or a rolling pin.

Cooking

  • Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  • Place one disc in the skillet and cook for 2-3 minutes on each side until golden brown and slightly crispy. Repeat with remaining discs.

Serving

Notes

For gluten-free options, consider using almond flour or a gluten-free all-purpose blend. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze with parchment paper in between.
