  • 4 large large eggs
  • 0.5 cup black beans, drained and rinsed
  • 1 cup spinach, chopped
  • 0.25 cup diced bell pepper
  • 0.25 cup shredded cheese (cheddar or your choice)

  • 4 whole whole wheat tortillas
  • to taste Salsa for topping

Preparation

  • In a bowl, whisk together the eggs, salt, and pepper.
  • Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook, stirring occasionally until the eggs are just set. Remove from heat.
  • Stir in the black beans, chopped spinach, and diced bell pepper. Combine well to let the residual heat wilt the veggies.
  • On each whole wheat tortilla, place a generous scoop of the egg and veggie mixture, followed by a sprinkle of shredded cheese. Fold the sides over and roll it up tightly.
  • Place the burrito seam-side down on the skillet and toast each side for 2-3 minutes until golden brown and crispy.
  • Slice in half and serve with salsa on top or on the side for a delightful kick.

Notes

For a heartier version, add diced potatoes to the skillet with the eggs. Keep an eye on the eggs while cooking to avoid a rubbery texture.
