Heavenly Summer Peach Bars

Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • ½ cup granulated sugar Can adjust sweetness
  • ½ cup brown sugar Packed
  • 1 cup rolled oats
  • ½ cup butter, softened Should be at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

For the filling

  • 2 cups fresh peaches, peeled and diced Approximately 3-4 medium peaches

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish and set aside.
  • In a bowl, combine the flour, brown sugar, granulated sugar, oats, baking powder, salt, and cinnamon. Add the softened butter and mix until the mixture resembles coarse crumbs.
  • Reserve about 1 cup of the crust mixture for topping, and press the remaining mixture into the bottom of the prepared baking dish evenly.
  • In a separate bowl, toss the diced peaches with a bit of sugar (if desired) and vanilla extract. Distribute the peaches evenly over the crust.
  • Sprinkle the reserved crust mixture over the peaches to create a crumbly topping.
  • Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown.
  • Allow the bars to cool in the pan for at least 10 minutes before slicing into squares. Enjoy warm or at room temperature!

Notes

Use ripe, juicy peaches for best flavor. Optional: add chopped nuts or coconut to the topping for extra crunch. Store in an airtight container in the refrigerator for up to 4-5 days.
