  • 2 to 3 pounds beef chuck roast Choose a well-marbled cut for tenderness
  • 2 cups beef broth Adds flavor to the dish
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce Ensure it's alcohol-free
  • 1 teaspoon fresh thyme Or use ½ teaspoon dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 to 6 pieces hoagie rolls or baguettes
  • as needed slices Provolone or Swiss cheese For topping
  • optional sliced sweet peppers or crispy onions For added flair

Preparation

  • Trim any excess fat from the beef chuck roast and season it generously with salt and pepper.
  • In a bowl, combine the beef broth, Worcestershire sauce, minced garlic, and thyme.
  • Place the sliced onions at the bottom of the slow cooker, then add the seasoned roast and pour the broth mixture over the top.

Cooking

  • Set your slow cooker to low and let it cook for 8 hours or high for about 4 hours, until the beef is fork-tender.
  • Once cooked, remove the roast from the slow cooker and shred it with two forks, discarding any remaining fat.
  • Return the shredded beef to the slow cooker and mix to combine with the juices.

Serving

  • Toast the hoagie rolls lightly in the oven or on a skillet.
  • Take a generous portion of the beef and place it inside each hoagie roll, top with melted cheese and optional toppings.
  • Ladle the remaining broth into small bowls or cups for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze shredded beef with broth for up to 2 months.
