  • 2 lbs bone-in chicken thighs (skinless) Use skinless thighs for a healthier option.
  • 4 cups chicken broth You can use homemade or store-bought broth.
  • 3 carrots, diced
  • 3 potatoes, diced Any type of potatoes can be used.
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper To taste
  • 1 tablespoon olive oil (optional for sautéing) Enhances flavor if sautéed.

Preparation

  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant, about 3-4 minutes. This step adds depth to your stew, but feel free to skip it for a quicker option.
  • In your slow cooker, place the bone-in chicken thighs, followed by the diced carrots, potatoes, and celery.
  • Pour in the chicken broth and add the sautéed onion and garlic (if using). Sprinkle in the thyme, rosemary, salt, and pepper.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 4 hours, or until the chicken is cooked through and tender.
  • About 30 minutes before the end of cooking, remove the chicken, shred it with two forks, and return it to the slow cooker. Stir to combine.

Serving

  • Ladle the hearty stew into bowls and garnish with fresh herbs if desired.

Notes

Serve with crusty bread or fluffy biscuits for a comforting meal. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat on the stovetop or microwave, adding a touch of milk or broth to prevent drying out.
