Main Ingredients

  • 1 pound ground turkey (or diced chicken) Can substitute with halal beef or plant-based meat.
  • 1 medium onion, chopped
  • 1 unit bell pepper, diced Use your favorite color.
  • 1 cup mushrooms, sliced
  • 2 cups pizza sauce (store-bought or homemade)
  • 3 cups cooked pasta (preferably penne or rotini)
  • 2 cups shredded mozzarella cheese For topping.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

  • black olives
  • spinach
  • additional veggies of your choice

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the ground turkey (or chicken) along with the chopped onion. Cook until the meat is browned and the onion is translucent, about 7-10 minutes.
  • Stir in the diced bell pepper and sliced mushrooms. Cook for an additional 5 minutes until the veggies soften.
  • In a large mixing bowl, combine the cooked pasta, pizza sauce, Italian seasoning, garlic powder, and meat mixture. Mix until everything is well combined.
  • Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly. Top it with a generous amount of shredded mozzarella cheese.
  • Place the casserole in the preheated oven and bake for about 25 minutes or until the cheese bubbles and turns golden brown.
  • Let it rest for a few minutes before slicing.

Notes

For a crunchier topping, pop the dish under the broiler for the last few minutes, keeping a close eye on it to avoid burning. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
