  • 1 medium head green cabbage, chopped
  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups vegetable broth
  • 1 cup green beans, trimmed and chopped
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf

  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat the olive oil over medium heat. Once hot, add the diced onions and sauté for about 3 minutes until they become translucent.
  • Stir in the minced garlic and diced carrots. Cook for an additional 3-4 minutes, allowing the flavors to meld.
  • Gradually add the chopped cabbage, stirring it gently to combine with the onion and carrots. Sauté for another 5 minutes, allowing the cabbage to wilt.
  • Pour in the canned tomatoes (with juice) and vegetable broth, then add the green beans, thyme, bay leaf, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20 minutes. Stir occasionally, allowing the flavors to develop and the vegetables to become tender.
  • Remove the bay leaf before serving. Ladle the soup into bowls and enjoy warm.

Notes

Pair with crusty whole grain bread or a side salad for balance. This soup stores well; refrigerate for up to 4 days or freeze for up to 3 months.
