  • 2 cups dried navy beans (soaked overnight) Soaking overnight leads to better cooking results.
  • 1/2 cup onion (diced)
  • 1/4 cup brown sugar (lightly packed)
  • 1/4 cup ketchup Can use Halal alternative.
  • 1 tablespoon molasses
  • 1 teaspoon mustard powder For that tangy kick.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • to taste Salt Adjust according to preference.
  • Optional: Chopped fresh parsley or shredded cheese for garnish

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • If you haven’t soaked the navy beans overnight, you can use the quick method by boiling them in water for about 2 hours or until tender. Drain and set them aside.
  • In a medium skillet, sauté the diced onions over medium heat until they become translucent—about 5 minutes.

Combining Ingredients

  • In a large mixing bowl, combine the brown sugar, ketchup, molasses, mustard powder, garlic powder, black pepper, and salt. Add the sautéed onions and mix well.
  • Add your prepared navy beans into the bowl and pour the vegetable broth on top. Mix everything until the beans are well coated with the savory sauce.

Baking

  • Pour the mixture into a baking dish and cover it tightly with aluminum foil.
  • Place the dish in the preheated oven and bake for about 1 hour.
  • After an hour, uncover and continue baking for 20-30 more minutes, allowing the sauce to thicken and the flavors to deepen.

Serving

  • Once baked, let it cool for a few minutes before serving. Garnish with fresh parsley or shredded cheese if desired.

Notes

Store in an airtight container in the refrigerator for about 5 days, or freeze in a sealed freezer bag for up to 3 months. Thaw in the fridge overnight before reheating.
