  • 1 lb ground turkey Lean protein
  • 1 cup brown rice For base of the bowl
  • 1/4 cup teriyaki sauce Use Halal-certified if needed
  • 1 cup broccoli florets Fresh or frozen
  • 1 medium carrot, sliced Adds sweetness
  • 1 medium bell pepper, sliced Any color
  • 2 stalks green onions, chopped For garnish
  • 1 tbsp olive oil For sautéing
  • Salt and pepper to taste To season

Preparation

  • Cook the brown rice according to package instructions, usually taking about 20-25 minutes.
  • While the rice is cooking, heat the olive oil in a large pan over medium heat.
  • Add the sliced carrot, bell pepper, and broccoli florets. Sauté for about 5-7 minutes until tender but still crisp.
  • Push the vegetables to the side of the pan and add the ground turkey. Season with a pinch of salt and pepper and cook for 5-7 minutes or until no longer pink.
  • Add the teriyaki sauce to the mixture, stirring to combine. Let it simmer for an additional 3-4 minutes.
  • Fluff the cooked brown rice and serve it in bowls, topped with the turkey and vegetable mixture. Garnish with chopped green onions.

Notes

To make this dish vegetarian, substitute ground turkey with lean ground chicken or tofu. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to two months. Reheat with a splash of water or extra teriyaki sauce.
