Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, toss the diced sweet potatoes with a bit of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
  • Roast for about 20 minutes, or until tender and slightly caramelized, flipping halfway through.

Chopping

  • While the sweet potatoes are roasting, chop the cherry tomatoes, cucumber, bell pepper, and red onion.

Dressing

  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.

Combining

  • In a large bowl, add the roasted sweet potatoes, chopped vegetables, and parsley.
  • Drizzle the dressing over the top and gently toss to combine all the flavors.
