  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce use low-sodium for a healthier option
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced any color you prefer
  • 1 cup broccoli florets
  • Salt and pepper to taste

Preparation

  • Start by cutting the chicken into bite-sized pieces and slicing the bell pepper. Wash the broccoli florets and set everything aside.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken pieces and season with salt and pepper. Cook until the chicken is browned on all sides and cooked through, about 6-8 minutes.
  • Toss in the sliced bell pepper and broccoli florets. Sauté for an additional 3-4 minutes until the vegetables are tender but still crisp.
  • Reduce the heat to low, pour in the sweet chili sauce and soy sauce, stirring to combine well with the chicken and vegetables. Cook for another 1-2 minutes, just until everything is heated through.
  • Plate the chicken and vegetable mixture, garnish with sliced green onions and sesame seeds if desired. Enjoy your meal!

Notes

Marinate the chicken in sweet chili and soy sauce for about 30 minutes before cooking for extra flavor. Customize your veggies based on preferences. For a milder dish, use half of the sweet chili sauce initially.
