  • 2 pounds beef chuck, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

  • Fresh parsley Optional for garnish

Preparation

  • Start by chopping your onion, garlic, carrots, and celery.
  • In a skillet over medium-high heat, lightly brown the beef chunks for about 3-4 minutes. This step is optional.

Cooking

  • In your slow cooker, add the browned beef, chopped onion, garlic, diced carrots, celery, crushed tomatoes, tomato paste, beef broth, oregano, basil, salt, and pepper.
  • Stir everything to combine, then cover and set your slow cooker on low for 6-8 hours or high for 3-4 hours.
  • As the ragu nears completion, taste and adjust seasoning if desired.
  • Serve hot, topped with fresh parsley over pasta or polenta.

Notes

For substitutions, consider lamb or chicken. Use a higher setting on your slow cooker if time is short. Take your time with the browning step for best flavor. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
