Preparation

  • Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil.
  • Pat your cod fillets dry with paper towels and place them in the greased baking dish. Season both sides with salt and pepper.

Cooking

  • Spoon the pesto sauce evenly over each cod fillet.
  • Top each fillet with a generous sprinkle of grated Parmesan cheese.
  • Bake for 15-18 minutes, or until the fish flakes easily with a fork and is cooked through.

Serving
