  • 2 cups plain Greek yogurt Can use full-fat or low-fat based on preference
  • 1/2 cup creamy peanut butter Substitute with almond or cashew butter if allergic
  • 1/4 cup honey or maple syrup Adjust based on sweetness preference
  • 1/2 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir well until everything is nicely blended.
  • Using a spoon or a small ice cream scoop, portion out the yogurt mixture into silicone molds or an ice cube tray. Fill each mold to the top.
  • If desired, sprinkle the tops of each yogurt bite with your choice of chopped nuts, mini chocolate chips, or dried fruits for an extra flavor boost.
  • Place the molds in the freezer. Let them freeze for at least 4 hours, or until completely solid.
  • Once frozen, remove the bites from the molds and enjoy as a healthy snack!

Notes

These bites are perfect for meal prep! Store any leftovers in an airtight container in the freezer for up to three months. No need to reheat; simply grab them when you need a quick snack.
