  • 2 pieces ripe bananas (mashed) Ensure bananas are very ripe for sweetness
  • 1 cup peanut butter (natural or creamy) Natural peanut butter is recommended for a richer flavor
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup Optional for added sweetness
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • pinch salt

Optional Add-ins

  • to taste chocolate chips Mix-ins optional
  • to taste chopped nuts
  • to taste dried fruits

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth. Then, mix in the peanut butter, honey (if using), and vanilla extract until well combined.
  • In a separate bowl, mix the rolled oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until everything is well combined. If using any optional add-ins, fold them in at this stage.
  • Using a tablespoon, scoop out portions of the dough and place them onto the prepared baking sheet. Flatten them slightly, as they will retain their shape while baking.
  • Bake in the preheated oven for about 10-12 minutes, or until the edges turn a light golden brown.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftover cookies in an airtight container at room temperature for up to five days. They can be frozen for up to three months. Reheat in the microwave for about 10-15 seconds.
