Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup flour (whole wheat or all-purpose)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/3 cup honey or maple syrup
  • 1/2 cup almond butter (or any nut/seed butter) Can substitute for nut-free butter
  • 1/2 teaspoon vanilla extract

Mix-ins

  • 1/2 cup dark chocolate chips (or dairy-free chocolate chips)

Preparation

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper. Make sure the paper hangs over the sides for easy removal later.
  • In a large mixing bowl, combine rolled oats, flour, baking powder, and salt. Stir until well mixed.
  • In a separate bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry mixture and stir until fully combined. The mixture should be thick.
  • Fold in the chocolate chips until they are evenly distributed throughout the batter.
  • Transfer the mixture to the prepared baking dish, spreading it evenly with a spatula.
  • Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown.
  • Remove from the oven and let it cool in the pan for 10 minutes before lifting it out using the parchment overhang. Allow it to cool completely on a wire rack before cutting into bars.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze for up to 3 months. Reheat in the microwave for 10-15 seconds or in a toaster oven.
