Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup pecans, chopped
  • 1 cup unsweetened shredded coconut
  • 1/2 tsp cinnamon
  • a pinch salt

Wet Ingredients

  • 1/3 cup honey or maple syrup Choose based on preference.
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, chopped pecans, shredded coconut, cinnamon, and a pinch of salt. Stir until well mixed.
  • In a separate small bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients.
  • Gently fold the wet and dry ingredients together until all the oats are coated evenly.
  • Line a baking sheet with parchment paper and spread the granola mixture evenly across the sheet.

Baking

  • Bake in the preheated oven for about 20-25 minutes, stirring halfway through, until golden brown and fragrant.
  • Let the granola cool completely before storing it in an airtight container.

Notes

Store in an airtight container at room temperature for about two weeks. For longer storage, freeze in a freezer-safe bag or container. No reheating necessary; enjoy it straight from the jar or added to yogurt and smoothie bowls.
