  • 1 cup almond butter Use Halal-certified brands where possible.
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 large eggs Substitute with flax eggs for egg-free version.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  • In a large bowl, mix together the almond butter, melted coconut oil, honey (or maple syrup), and vanilla extract until fully combined.
  • Beat in the eggs one at a time, ensuring they are fully incorporated.
  • In a separate bowl, whisk together the cocoa powder, baking soda, and salt. Gradually add to the wet ingredients, stirring until smooth.
  • Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then transfer it to a cooling rack.
  • Slice into pieces and serve as is, or garnish with toppings of your choice.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze slices wrapped in plastic wrap and aluminum foil for up to three months. To enjoy, thaw or warm gently in the microwave.
