  • 1.5 cups Medjool dates (pitted) Fresh and soft dates work best.
  • 1 cup almond flour
  • 0.5 cups cocoa powder
  • 0.5 teaspoons baking soda
  • 0.5 cups almond milk (unsweetened)
  • 1 teaspoon vanilla extract
  • a pinch salt

Preparation

  • Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking dish by lining it with parchment paper.
  • Blend the dates in a food processor until they form a sticky paste. If the dates are very dry, soak them in warm water for 10 minutes, then drain and blend.
  • Add the almond flour, cocoa powder, baking soda, almond milk, vanilla extract, and salt into the food processor with the date paste. Blend until the mixture is smooth and well-combined.
  • Transfer the batter into the prepared baking dish and spread it evenly with a spatula.
  • Bake the brownies in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let them cool for about 10-15 minutes in the pan before slicing them into squares.

Serving Suggestions

  • Serve with a scoop of vanilla or almond dairy-free ice cream, a drizzle of homemade chocolate sauce, or alongside fresh berries.

Notes

Store in an airtight container at room temperature for up to 3 days. These brownies freeze well for up to 3 months; simply wrap individually and thaw when needed.
