Preparation

  • If you haven’t already, cook and shred your chicken breast.
  • In a large mixing bowl, combine the shredded chicken, Greek yogurt, diced cucumbers, halved cherry tomatoes, and red onion.
  • Pour the fresh lemon juice over the salad mixture.
  • Add salt and pepper to taste and give everything a good mix until well combined.
  • For the best flavor, let the salad chill in the refrigerator for at least 30 minutes.

Notes
