  • 1/4 cup mayonnaise Adjust based on preference.
  • 1 cup celery, chopped Adds crunch and flavor.
  • 1/2 cup grapes, halved Can substitute with diced apple for a crunch.
  • 1/4 cup walnuts or almonds, chopped Optional for added texture.
  • 1 tsp mustard Provides additional flavor.
  • 1 tsp salt Adjust to taste.

  • Whole grain bread or lettuce leaves for serving Choose based on preference.

Preparation

  • If you haven’t already, cook and dice your chicken.
  • In a large mixing bowl, combine the Greek yogurt, mayonnaise, mustard, salt, and pepper. Stir well until smooth.
  • Add the diced chicken, chopped celery, grapes (or diced apple), and nuts (if using) to the bowl. Gently mix until everything is well-coated with the dressing.
  • Give your chicken salad a taste and adjust the seasoning if necessary.
  • Spread the chicken salad onto slices of whole-grain bread or in lettuce leaves for a lighter option. Top with another slice of bread or roll up the lettuce.
  • Slice the sandwiches in half and serve immediately, or cover them in the fridge until you’re ready to enjoy.

Notes

Leftovers can last in the refrigerator for up to 3 days. To avoid sogginess, keep the chicken salad and bread separate until serving.
