  • 2 cups whole wheat pasta
  • 1 lb boneless, skinless chicken breast, diced
  • 2 cups fresh broccoli florets
  • 1 cup low-fat milk
  • 1 cup shredded light mozzarella cheese

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Preparation

  • Preheat your oven: Set it to 375°F (190°C) to ensure it’s hot when you’re ready to bake.
  • Cook the pasta: In a large pot, boil water and cook your whole wheat pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the chicken: In a large skillet over medium heat, heat olive oil. Add the diced chicken along with garlic powder, onion powder, salt, and pepper. Cook until browned and fully cooked, about 5-7 minutes.
  • Add broccoli: Stir in the fresh broccoli florets and allow them to sauté for about 2-3 minutes until they are vibrant green and tender.
  • Combine ingredients: In a large bowl, mix the cooked pasta, chicken and broccoli mixture, low-fat milk, and half the mozzarella cheese. Mix well to combine.
  • Transfer to baking dish: Pour the mixture into a greased baking dish. Sprinkle the remaining mozzarella cheese on top.
  • Bake: Place the dish in the preheated oven and bake for about 20-25 minutes or until the cheese is melted and bubbly.
  • Garnish & serve: Remove from the oven, let it cool slightly, garnish with fresh parsley if desired, and serve warm!

Tips for Perfecting: Use any pasta variety you prefer, ensure the chicken is thoroughly cooked, and avoid overcooking the pasta initially to prevent sogginess. For storing, keep it in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2-3 months.
