  • 2 cups rolled oats Use whole rolled oats for the best texture.
  • 2 pieces ripe bananas (mashed) Ensure bananas are ripe for optimal sweetness.
  • 1 cup mixed berries (fresh or frozen) Any mix of berries can be used.
  • 1 cup almond milk (or any plant-based milk) Any plant-based milk can be substituted.
  • 1/4 cup honey or maple syrup Adjust sweetness according to preference.
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x9-inch baking dish lightly with cooking spray or coconut oil.
  • In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well.
  • In another bowl, mash the bananas until smooth. Add almond milk, honey or maple syrup, and vanilla extract, then mix.
  • Pour the wet mixture into the dry ingredients and gently fold in the mixed berries.
  • Spread the mixture evenly into the prepared baking dish.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  • Allow to cool for a few minutes before serving. Enjoy warm with toppings.

Notes

Store in an airtight container for up to 4 days or freeze for up to 3 months. Reheat with a splash of almond milk.
