  • 2 cups rolled oats Use gluten-free oats if necessary.
  • 2 cups almond milk Can substitute with any milk of choice.
  • 2 pieces ripe apples, peeled and diced Choose sweet varieties like Fuji or Honeycrisp.
  • 1/4 cup maple syrup or honey Adjust based on sweetness preference.
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • a pinch salt Enhances flavors.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with a little oil or non-stick spray.
  • In a large bowl, combine the rolled oats, cinnamon, baking powder, and salt.
  • In another bowl, whisk together the almond milk, maple syrup (or honey), and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients, stirring until combined. Gently fold in the diced apples.
  • Spoon the mixture into the prepared muffin tin, filling each cavity about 3/4 of the way full.
  • Bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  • Allow the oatmeal cups to cool for a few minutes before removing them from the muffin tin. Enjoy warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Reheat in the microwave as needed. For added crunch, consider mixing in walnuts or pecans.
