Ingredients
  

Main Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 large avocados, ripe and diced
  • 1 cup tomatoes, diced (cherry tomatoes work great too)
  • 1/2 small red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice, fresh
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • 1 small jalapeño, seeded and chopped (optional) for some heat

Preparation

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and season with salt, pepper, and minced garlic. Sauté for about 3-5 minutes or until the shrimp turn pink and opaque. Remove from heat and let cool.
  • While the shrimp cool, dice the avocados and tomatoes, and chop the red onion and cilantro. If you’re adding jalapeño for a kick, chop it up now too.

Making the Salsa

  • In a mixing bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and remaining olive oil. Mix well to create the salsa base.

Combining

  • Once the shrimp is cooled, add them to the salsa mixture, and gently fold in the diced avocados. Be careful not to mash the avocados!

Serving

  • Taste and adjust the seasoning with salt and pepper if necessary. Serve chilled or at room temperature. Garnish with additional cilantro for a fresh touch.

Notes

Substitutions: If shrimp isn’t your thing, feel free to replace it with grilled chicken or even canned tuna for a quick alternative! Timing: Add the avocado just before serving to prevent browning. To prevent mushy avocados, select ripe but firm avocados.
