Ingredients
  

Dry Ingredients

  • 1 cup rolled oats Use certified gluten-free rolled oats if needed.
  • 1 cup whole wheat flour
  • 1/2 cup baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup applesauce (unsweetened)
  • 1/4 cup honey or maple syrup Choose according to your preference.

Fruits & Add-ins

  • 1 medium apple, peeled and diced Granny Smith or Honeycrisp varieties recommended.
  • 1/4 cup raisins or walnuts (optional) Can be omitted or replaced with chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt. Stir well to combine.
  • In a separate bowl, whisk together the applesauce and honey (or maple syrup) until fully blended.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix!
  • Fold in the diced apple and raisins or walnuts if you’re using them.
  • Scoop spoonfuls of the cookie dough onto the prepared baking sheet, flattening them slightly.

Baking

  • Bake in the preheated oven for 12-15 minutes, or until golden brown around the edges.
  • Allow them to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store these cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to 3 months. Reheat in a microwave for 10-15 seconds for best enjoyment.
