Preparation

  • Line a baking sheet with parchment paper.

  • In another bowl, mix the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

Combining Mixtures

  • Gently fold in the dark chocolate chips.

Baking the Cookies

  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each cookie.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze separated with parchment paper.
