  • 1 can (14.5 oz) diced tomatoes with juice
  • 4 cups beef or vegetable broth
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnishing (optional)

  • In a large pot over medium heat, add the ground beef. Cook for about 5-7 minutes until browned, breaking it apart with a spatula. Drain excess grease if necessary.
  • Stir in the chopped onion and minced garlic. Cook until they soften, about 2-3 minutes.
  • Add the sliced carrots and diced celery. Stir to combine and let it cook for another 3-4 minutes until tender.
  • Mix in the diced tomatoes and their juice, broth, and Italian seasoning. Bring the mixture to a boil.
  • Reduce the heat and let it simmer for about 10 minutes, allowing flavors to meld beautifully.
  • Stir in the macaroni and cook according to package instructions until al dente, about 8-10 minutes.
  • Taste and season with salt and pepper as desired.
  • Ladle the soup into bowls, garnish with fresh parsley if utilizing, and enjoy!

Notes

Feel free to add leftover vegetables for extra flavor. Swap ground beef for turkey or chicken for a lighter option. Garnish with cheese or herbs for an enhanced flavor.
