Pasta & Dressing

  • 8 oz elbow macaroni (uncooked) Use uncooked macaroni.
  • 1 cup mayonnaise (preferably Halal-certified)
  • 2 tbsp mustard (yellow or Dijon for more flavor)
  • 1/4 cup pickle relish
  • 1/2 cup red bell pepper (finely chopped)
  • 1/2 cup celery (finely chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/2 tsp garlic powder
  • to taste N/A Salt and black pepper

Garnish

  • 1/4 cup green onions (chopped, for garnish) Optional: Add fresh herbs like dill or parsley for extra flavor.

Preparation

  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions, until al dente, typically about 8-10 minutes. Drain and rinse the pasta under cold water to stop the cooking process.
  • In a large mixing bowl, combine the mayonnaise, mustard, pickle relish, garlic powder, salt, and black pepper. Stir well until you have a smooth dressing.
  • To the dressing, add the cooked and cooled macaroni, red bell pepper, celery, and red onion. Gently fold the ingredients together until everything is evenly coated with the dressing.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Just before serving, fold in the chopped green onions and any fresh herbs if desired. Taste and adjust seasoning if necessary.

Notes

Feel free to swap out vegetables to suit your taste, such as adding sweet corn or diced cucumbers for extra crunch. Allow your salad to chill longer for enhanced flavor.
