Preparation

  • In a bowl, combine the cream cheese, erythritol, cinnamon, and vanilla extract. Mix until it becomes a smooth, creamy filling.
  • In a separate bowl, mix the almond flour and salt. Then, add in the egg and combine until a dough forms.
  • On a parchment-lined surface, roll out the dough as thinly as possible without tearing it. Aim for a rectangular shape for easy rolling later.
  • Carefully spread the cream cheese filling evenly across the dough, leaving a border for sealing.
  • Starting from one end, roll the dough tightly into a log shape, being careful not to squeeze out the filling.
  • Once rolled, slice the log into approximately 1-inch pieces to create individual roll-ups.

Cooking

  • In a heated skillet, melt the butter over medium heat. Add the roll-ups and fry for 3-4 minutes on each side or until golden brown.
  • Let the roll-ups cool slightly before serving, then enjoy the crispy, creamy goodness!
