Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking sheet with butter.
  • In a mixing bowl, blend the softened cream cheese and eggs together until creamy.
  • Gradually add in the almond flour, baking powder, cinnamon, erythritol (or sweetener), and vanilla extract to create a smooth dough.
  • Take small amounts of the dough and roll them out into thin rectangles on a floured surface.
  • Spread a generous layer of the cinnamon mixture across the top of each rectangle.
  • Carefully roll each rectangle into a tight cylinder, starting from one of the shorter sides.
  • Place the roll-ups on the greased baking sheet, seam side down, and bake for 15-20 minutes, or until they are golden brown.
  • Allow the roll-ups to cool slightly before serving. Drizzle with some extra cinnamon and sweetener mix if desired.

Notes

Grease your work surface to prevent sticking. Use room temperature cream cheese for easier blending. Experiment with fillings like nuts or chocolate chips. Keep an eye on baking time to avoid over-baking.
