Ingredients
  

For the cookies

  • 1 cup almond flour Can substitute with oat flour or all-purpose flour.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips Extra chocolate is encouraged.

For the assembly

  • 1 pint guilt-free ice cream (dairy or non-dairy) Choose your favorite flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the almond flour, baking soda, and salt; mix well.
  • Add the melted coconut oil, maple syrup (or honey), and vanilla extract to the dry ingredients. Stir until everything is combined and forms a dough.
  • Gently fold in the chocolate chips.
  • Scoop out a tablespoon of the dough and place it on the prepared baking sheet, flattening it slightly. Repeat until you have 12 cookie rounds (six sandwiches).

Baking

  • Bake for about 10-12 minutes until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.

Assembly

  • Once cooled, place a big scoop of your favorite ice cream on one cookie, and top it with another cookie. Press lightly to create your sandwich.
  • Enjoy immediately or freeze for later!

Notes

If using almond flour isn't available, substitute with oat flour or all-purpose flour. Chill the dough for 30 minutes before baking for better shaping, and avoid overbaking for a chewy texture. Store leftovers in an airtight container in the freezer for up to two weeks.
