  • 1 lb ground turkey Lean ground turkey
  • 2 medium zucchinis, sliced Fresh zucchini
  • 1 medium onion, diced Yellow or white onion
  • 2 cloves garlic, minced Fresh garlic for flavor
  • 1 piece bell pepper, diced Any color bell pepper
  • 1 teaspoon Italian seasoning For seasoning
  • to taste Salt and pepper Adjust to your preference
  • 2 tablespoons olive oil For cooking

Preparation

  • Begin by washing and slicing your zucchinis, dicing the onion, and mincing the garlic.

Cooking Turkey

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the ground turkey, season with salt and pepper, and cook until it’s browned and cooked through, about 5-7 minutes.

Adding Vegetables

  • Once the turkey is nicely browned, push it to one side of the skillet. Add the remaining olive oil to the empty side and toss in the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until the veggies begin to soften.

Combine & Season

  • Add the sliced zucchini to the skillet and sprinkle with Italian seasoning. Mix everything together and continue to cook for another 5-7 minutes, or until the zucchini is tender but still slightly crisp.

Final Touches

  • Taste and adjust the seasoning with more salt and pepper as desired.
