Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sliced zucchini. Sauté for about 5-7 minutes until the zucchini is tender and the onion becomes translucent.
  • Push the vegetables to one side of the skillet and add the ground turkey. Cook until browned and fully cooked, breaking it up with a wooden spoon. Add the minced garlic and Italian seasoning, stirring everything together for about 1 minute.
  • Pour in the heavy cream (or half-and-half) and stir until well combined, letting it bubble lightly for a couple of minutes to thicken slightly.
  • In a baking dish, transfer the turkey and zucchini mixture, spreading it evenly. Top with shredded cheese, ensuring an even layer.
  • Place the dish in the preheated oven and bake for about 20-25 minutes until the cheese is bubbly and golden.
  • Once done, take it out, let it cool for a few minutes, and serve it warm.

Notes

Feel free to add more vegetables or spice it up according to your family’s preferences. Store any leftovers in an airtight container in the fridge for up to 3-4 days.
