Ingredients
  

For the sweet potatoes

  • 4 medium sweet potatoes washed and dried

For the turkey filling

  • 1 pound ground turkey ensure it's Halal
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup black beans drained and rinsed (optional)
  • 1 cup corn canned or frozen

For toppings

  • Diced avocado
  • Chopped cilantro
  • Sliced jalapeños
  • Sour cream or Halal-friendly yogurt alternative
  • Lime wedges

Preparation

  • Preheat your oven to 400°F (200°C). Prick the sweet potatoes all over with a fork and place them directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until tender.

Cooking the turkey

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent (about 4-5 minutes).
  • Add the ground turkey to the skillet. Season with chili powder, cumin, salt, and pepper. Cook for about 5-7 minutes, stirring frequently until the turkey is cooked through.
  • If using black beans and corn, stir them into the turkey mixture and let cook for another 2-3 minutes until heated through.

Assembling

  • Once the sweet potatoes are cooked, carefully slice each potato lengthwise and gently fluff the insides with a fork. Spoon the turkey filling generously into each sweet potato half.
  • Top each stuffed sweet potato with your choice of toppings and serve with lime wedges.

Notes

Consider substitutions with ground chicken or beef if ground turkey is unavailable. Store leftovers in the refrigerator for up to 3 days.
