Cooking the Rice

  • In a medium saucepan, bring 2 cups of water to a boil.
  • Add the rice, reduce the heat to low, cover, and let it simmer until fluffy (about 15 minutes for white rice, about 40 minutes for brown rice).

Sautéing the Vegetables

  • While the rice cooks, heat olive oil in a large skillet over medium heat.
  • Add the diced onion and sauté until translucent.
  • Incorporate the garlic and diced bell pepper, allowing them to soften for about 3-4 minutes.

Cooking the Turkey

  • Now, add the ground turkey to the skillet, breaking it apart with a spatula as it cooks.
  • Season with chili powder, cumin, salt, and pepper.
  • Cook until the turkey is browned and fully cooked (around 5-7 minutes).

Adding the Corn

  • Stir in the corn and allow everything to cook together for another 2-3 minutes until heated through.

  • Once the rice is ready, fluff it up with a fork and scoop it into bowls.
