Main Ingredients

  • 1 pound ground beef can substitute with turkey or chicken
  • 4 cups potatoes, diced or sliced thin peeled or unpeeled as you prefer
  • 2 cups shredded cheddar cheese can experiment with other cheese types
  • 1 cup milk
  • 1 small onion, diced
  • 1 can cream of mushroom soup or your favorite cream soup
  • to taste Salt and pepper

Optional Toppings

  • chopped green onions or parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef with the diced onions. Season with salt and pepper. Once fully cooked, drain any excess fat.
  • In a mixing bowl, combine the cream of mushroom soup and milk. Add the browned beef and mix well until combined.

Assembly

  • In a greased baking dish, layer half of the potatoes evenly on the bottom.
  • Pour half of the beef mixture over the potatoes. Sprinkle 1 cup of cheddar cheese on top.
  • Repeat the layering with the remaining potatoes, beef mixture, and top with the other cup of cheddar cheese.

Baking

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  • Let it cool slightly before serving. Garnish with optional toppings if desired!

Notes

If you have leftovers, you can store them in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze portions and thaw overnight in the fridge before reheating.
