Ingredients
  

Marinade

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup ranch dressing
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper

  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

  • In a large mixing bowl, combine the ranch dressing, grated Parmesan cheese, minced garlic, olive oil, salt, and pepper. Whisk together until well mixed.
  • Add the bite-sized chicken pieces to the marinade, ensuring each piece is well coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. If you're in a hurry, even 15 minutes will work!

Grilling

  • Preheat your grill to medium-high heat. If using charcoal, ensure the coals are glowing red with a light coating of ash.
  • Once the chicken is marinated, thread the pieces onto the skewers, leaving a little space between each piece for even cooking.
  • Place the skewers on the grill and cook for 6-8 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.
  • Once cooked through, remove the skewers from the grill and let them rest for a few minutes. Serve with your favorite dipping sauce, and enjoy your flavorful creation!

Notes

For enhanced flavor, marinate the chicken for a few hours or overnight. Feel free to add bell peppers, onions, or cherry tomatoes onto the skewers for extra flavor and color! Ensure your grill is adequately preheated for even cooking.
