  • 2 ripe nectarines, halved and pitted Choose ripe but firm nectarines to hold their shape during grilling.
  • 8 oz burrata cheese, preferably at room temperature Fresh mozzarella can be used as a substitute.
  • 2 tablespoons honey, preferably organic Warm the honey beforehand for easier drizzling.
  • 1 tablespoon olive oil Brush on nectarines to prevent sticking.
  • Fresh mint leaves, for garnish (optional) Adds color and freshness.
  • 1 pinch salt, to taste
  • 1 pinch black pepper, to taste (optional)

Instructions
 

Preparation

  • Preheat your grill to medium-high heat. If using a grill pan, heat it on the stove over medium-high heat.
  • Slice the nectarines in half and remove the pit. Brush the cut sides lightly with olive oil.

Grilling

  • Place the nectarines cut-side down on the grill. Grill for about 3-4 minutes until grill marks appear and they are slightly softened.
  • Remove the grilled nectarines from the grill and place them cut-side up on a serving platter.

Assembly

  • Tear the burrata into pieces and nestle it among the grilled nectarines.
  • Generously drizzle honey over the grilled nectarines and burrata.
  • Sprinkle a pinch of salt and black pepper over the dish to enhance the flavors.
  • Garnish with fresh mint leaves if desired.

Serving

  • Serve warm and enjoy with family and friends!

Notes

This dish is best enjoyed fresh. To store, keep in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven, avoiding the microwave to maintain texture.
