Preparation

  • Preheat your grill to medium-high heat.

Grilling

  • Lightly brush the cut sides of the nectarines with olive oil and season with a pinch of salt.
  • Place the nectarines cut-side down on the grill and cook for 3-4 minutes, or until grill marks appear and the nectarines are tender.
  • Remove from the grill and set aside.

Assembling the Salad

  • In a large salad bowl, add the arugula or mixed greens as the base.
  • Tear the burrata into pieces and layer it on top of the greens.
  • Slice the grilled nectarines into wedges and arrange them over the salad.
  • Drape the slices of prosciutto across the salad, layering them with the burrata and nectarines.
  • Drizzle with olive oil and sprinkle with freshly cracked pepper. Add balsamic glaze if desired.
  • Top with fresh basil leaves for a pop of color, and serve immediately.

Notes

Serve this salad immediately after assembling to ensure the greens stay crisp and the burrata remains creamy. If you have leftovers, store them in an airtight container in the refrigerator and consume within 24 hours.
