Instructions
 

Preparation

  • Finely chop the lemongrass, garlic, and shallots.
  • In a bowl, combine lemongrass, garlic, shallots, soy sauce, brown sugar, lime juice, olive oil, salt, and pepper. Mix well.

Marinating

  • Place chicken breasts in a zip-lock bag or shallow dish.
  • Pour marinade over chicken and ensure they are well-coated.
  • Let it marinate in the refrigerator for at least 30 minutes (up to 4 hours for more flavor).

Grilling

  • Preheat the grill to medium-high heat.
  • Remove chicken from marinade and discard excess.
  • Grill chicken for about 5-7 minutes per side until cooked through (internal temperature of 165°F/75°C).
  • Remove from grill and let rest for a few minutes before slicing.

Serving

  • Serve sliced chicken with fresh herbs, lime wedges, or dipping sauce of your choice.

Notes

For deeper flavor, marinate longer than 30 minutes or even overnight. Use a meat thermometer to ensure chicken reaches the correct internal temperature. Experiment with toppings like fresh herbs and lime juice for extra flavor.
