Ingredients

For assembling the gyros

  • Pita bread Soft and fluffy, perfect for holding all your delicious fillings.
  • Optional toppings: diced cucumber, chopped tomatoes, sliced red onion, feta cheese, tzatziki sauce Customize to your heart’s content.

Marinate the Chicken

  • In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and pepper.
  • Add the chicken thighs to the marinade, ensuring they are evenly coated.
  • Cover and let marinate in the refrigerator for at least 30 minutes; the longer, the better!

Preheat the Grill

  • Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop.

Grill the Chicken

  • Remove the chicken from the marinade and place it on the grill.
  • Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Rest and Slice the Chicken

  • Once cooked, let the chicken rest for a few minutes before slicing it into thin strips.

Assemble Your Gyros

  • Warm up your pita bread on the grill for about 1 minute per side.
  • Layer the grilled chicken in the center of each pita, then add your favorite toppings.

Drizzle with Tzatziki

  • Top with tzatziki sauce and wrap the pita around the fillings. Serve immediately and enjoy!

Notes

For substitutions, try beef or lamb if desired. Marinate overnight for extra tender chicken. Don't skip the resting step after grilling to retain juices. Store leftovers in an airtight container for up to 2-3 days.
